The essential components of any pizza are the dough, the sauce and the cheese which is why we use nothing but the best quality ingredients available.
We believe in supporting our local community so we use the freshest seasonal Cornish ingredients where possible for our toppings. You can see some of our main suppliers below.
cheese
Fior di latte is historically the mozzarella first used on pizzas in Naples for its freshness and creamy texture which is crucial on a pizza for us. We were over the moon when we found the only British producer of this divine cheese in Glastonbury, Somerset. For special events like weddings and parties and also on some of our special pizzas you can find Buffalo mozzarella from one of the the only British organic Buffalo mozzarella producers. Of course we can’t forget our local cheese producers who allow us to experiment with some intriguing flavour combinations:
Brue Valley
Nestled in the heart of Somerset, a stone’s throw from Glastonbury Tor, you will find Brue Valley where the Clapp family have farmed the land since 1538. Shown the art of creating fior di latte Mozzarella by friends from Italy many years ago, they produce this wonderful product which is perfect for our pizza cooked in our high temperature pizza oven, as it has a high melting point.
Laverstoke Park Farm
Laverstoke Park Farm produced the first serious buffalo mozzarella to be made in the UK after being shown the process in Italy. Nothing is added to lengthen the shelf life – it is simply made with buffalo milk fresh from their herd at the dairy. This award winning cheese is the one to beat and compliments our pizzas perfectly.
Curds & Croust
Curds and Croust only use the very best Cornish milk sourced from within 30 miles of their dairy – we know where it comes from and they know how to look after it. That ensures a really good curd and, in turn, a really good cheese. We’re big fans of their Cornish Truffler and Camembert which taste absolutely delicious on our pizzas.
The Cornish Cheese Company
Cornish Blue Cheese is a truly artisan handmade cheese, produced from milk supplied by the Stansfield’s family farm on the edge of Bodmin Moor near Liskeard in Cornwall.
When you try it on our pizzas you can understand why Cornish Blue Cheese has been internationally recognised by the many Awards including World Cheese Awards Champion Cheese in 2010 and Best Blue and English Cheese in 2007. Look out for monthly pizza specials using their Cornish goats cheese.
Davidstow
Davidstow cheddar is made with exacting care in the Cornish village from which they take their name. Inspired by their natural surroundings, Davidstow’s recipe has been meticulously crafted for over 60 years, to ensure that every bite is never less than exquisite, which is why it tastes so perfect on our pizzas.
Dough
It’s all about the base! As for our dough, we use a combination of Italian type 00 flour and a West Country organic multigrain seeded flour that adds a new light and digestible dynamic to our bases. No more bloated tummies with our pizzas!
Shipton Mill
Shipton Mill source their grains from local farms for a number of blends, where practicable. Over the years, they have also built relationships with suppliers across the world. It is from these suppliers, for example, that source some of the rare and old varieties of grain that we cannot easily obtain from British shores.
5 Stagioni
5 Stagioni is the leading brand in Italy for flour and semi-finished products for pizzerias. It’s the flour we learned with when we were in Florence on our training course. Understanding the different types of 00 flour available and how they work is crucial to a dough mix. So with that knowledge in hand it was a no brainer to stick with their flour.
Gluten Free
We also offer our own recipe of gluten free pizza bases using the top quality 5 Stagioni gluten free flour.
Meat
Cornish Charcuterie
Cornish Charcuterie is an award-winning artisan producer of British charcuterie based just outside of Bude. Now in its sixth year they supply an award-winning range of both soft and hard British charcuterie, from pork rillette with sloe gin, to seaweed and cider salami, using Cornish Lop pigs reared on the farm. Find their Coppa ham, chorizo and salami on our pizzas that add a unique and local flavour.
Duchy Charcuterie
Marc handmakes award winning British Charcuterie from his home in Redruth, Cornwall. Find his spicy Spinata sausage salami on our Spinata pizza as well as some of his other delicious cured meats on our specials throughout the year.
The Kernow Sausage Co.
The company’s products have won over 25 awards both locally and nationally, including Royal Cornwall Show’s ‘Best New Product 2011’. With the Cornish Sweetheart Bacon winning a Great Taste Award in 2012 and Mediterranean Medley Sausage also being successful in 2013, their products certainly have the attention of connoisseurs and naturally attracted our attention as well. Find their gluten free sausage meat on our pizzas as well as their Sweetheart bacon and ham.
Brian Etherington Meat Co.
Located in the heart of Cornwall just a few miles from us, Etherington’s Farm Shop is home to a range of everyday store cupboard ingredients, specialist products and award-winning meats – all under one roof in their eco-friendly building. We source our freerange lamb from them that’s reared in the county and grass-fed as well as their Cornish handmade pigs in blankets during the festive season.
Sauce
Our homemade tomato sauce is made the authentic Italian way with sweet San Marzano tomatoes from the foothills of Mount Vesuvius near Naples, the birthplace of pizza. Any Italian pizzeria worth it’s salt will be using these tomatoes. After spending three years in Italy we knew there was no cutting corners when it came to the sauce which is why our secret recipe has a distinctive sweet taste.
Vegetables
West Country Fruit Sales LTD
WestCountry is the oldest and largest specialist wholesaler of fresh produce in the South West. The business, first established in 1856, has built an unrivalled local network of dedicated high quality local growers of seasonal fresh produce which suited our needs for our vegetable toppings.
Cornish Chillis
Cornish chillies began in 2014 based in beautiful Cornish countryside at Summercourt, midway between Newquay and Truro. They started small with just a few hundred, but in 2017 they expanded to over 1000 plants covering 28 varieties from heatless to super-hot. Using organic methods all their chillies are grown locally with a range of carefully selected varieties for flavour, heat and culinary uses. You can find a variety of Cornish chillies on a few of our pizzas and also add them to spice up any of them too.
vegan / lactose free
Our dough is already vegan/lactose free and we offer an extensive delectable vegan/lactose free pizza menu using not just Violife cheese but our homemade vegan chesse alternatives.
We are eco friendly
We’re proud to say that we’re single-use plastic-free. We use 100% compostable pizza boxes and 100% biodegradable bags which are also both recyclable. We even serve cans of water.
